One-Pan Honey-Mustard Chicken for Sleep-Deprived Parents

Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 2 medium sweet potatoes, cut into 1-inch cubes
  • 12 oz green beans, trimmed
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 tbsp honey or maple syrup
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • Black pepper
  • Optional: lemon wedges or crumbled feta

Method

  1. Heat the oven to 425°F (220°C). Line a largesheet pan with foil or parchment for easier cleanup.
  2. Add the sweet potatoes, 1 tbsp olive oil, half the salt, and a little pepper. Roast for 15 minutes.
  3. Stir together the remaining olive oil, mustard, honey, garlic powder, paprika, and remaining salt. Coat the chicken.
  4. Add the chicken and green beans to the pan. Toss the beans with a little of the mustard mixture or olive oil.
  5. Roast for 18–25 minutes, until the chicken reaches 165°F (74°C) in the thickest part and the sweet potatoes are tender.
  6. Serve with lemon or feta if you have the energy. If not, put everything on plates and call it dinner.

Sleep-deprived-parent shortcuts

  • Use frozen green beans; add them straight to the pan.
  • Buy pre-cut sweet potato or substitute baby potatoes.
  • Use bottled honey-mustard dressing instead of mixing a sauce.
  • Double the chicken for tomorrow’s wraps, rice-bowls, or salad.
  • Chicken thighs are more forgiving if you get distracted by the baby.
