Ingredients
- 4 boneless, skinless chicken thighs or breasts
- 2 medium sweet potatoes, cut into 1-inch cubes
- 12 oz green beans, trimmed
- 2 tbsp olive oil
- 2 tbsp Dijon mustard
- 1 tbsp honey or maple syrup
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- Black pepper
- Optional: lemon wedges or crumbled feta
Method
- Heat the oven to 425°F (220°C). Line a largesheet pan with foil or parchment for easier cleanup.
- Add the sweet potatoes, 1 tbsp olive oil, half the salt, and a little pepper. Roast for 15 minutes.
- Stir together the remaining olive oil, mustard, honey, garlic powder, paprika, and remaining salt. Coat the chicken.
- Add the chicken and green beans to the pan. Toss the beans with a little of the mustard mixture or olive oil.
- Roast for 18–25 minutes, until the chicken reaches 165°F (74°C) in the thickest part and the sweet potatoes are tender.
- Serve with lemon or feta if you have the energy. If not, put everything on plates and call it dinner.
Sleep-deprived-parent shortcuts
- Use frozen green beans; add them straight to the pan.
- Buy pre-cut sweet potato or substitute baby potatoes.
- Use bottled honey-mustard dressing instead of mixing a sauce.
- Double the chicken for tomorrow’s wraps, rice-bowls, or salad.
- Chicken thighs are more forgiving if you get distracted by the baby.
